Pan Bread Production from Composite Flour of Wheat ( Shebam-8) and Pearl Millet

Summary

The low level of local production of wheat crop in Yemen with high consumption of its products by the citizens force the government to this huge gap by importing huge quantities of wheat grains that cost 730 millions dollars in the year 2007. Such critical situation needs proper solutions in which composite flour technology is one of them. This study aims to find out the proper replacement of flour from a promising wheat variety ( Shebam-8) with the flour of pearl millet, both of them produced locally. The flour ( 72% extraction)of wheat was replaced with pearl millet flour ( 80% extraction) with percentages ranged from 0-25%( six treatments).Short Straight Dough Method was used...........
